The stains on the inside are normal, as the interior glazing may change with use. Temperature and food can cause stains and/or colors to appear that are completely normal and do not affect their use at all. This occurs in all Le Creuset pieces, but depending on the color (light or black) and usage, they may be more or less noticeable. As you use it, a patina (a kind of black-brown film) will form on the satin black surface, and this patina should not be removed, as it improves cooking efficiency and makes it easier to remove food. The patina forms as a result of cooking natural oils and fats from food on the hot surface. Additionally, it will reduce the amount of oil needed to grease the surface of the utensil as you continue to use it.
