Differences between Mineral B and Carbone Plus.Updated 7 months ago

Both the Mineral B and Carbone Plus pieces are manufactured in France from iron plates (carbon steel = 99% iron + 1% carbon). The thickness in both collections is the same, ranging from 2.5 mm to 3 mm, depending on the diameter (the smaller pans have a thickness of 2.5 mm, and from 26 cm onwards, the thickness increases to 3 mm).

In all frying pans with iron handles from Mineral B and Carbone Plus, the handles feature an epoxy resin coating. This coating limits the time and temperature for oven use (maximum of 10 minutes at 200 °C).

From here, the differences are as follows:

MINERAL B

  • A layer of beeswax is applied in the factory to protect them from oxidation before use.
  • Amber color indicator on the handle distinguishes the collection. The indicator features a raised B and the silhouette of a bee.
  • Suitable for both domestic and professional use. For domestic use, they require seasoning with vegetable oil before the first use.
  • Riveted handle. High-quality rivet.
  • The largest size in pans is 36 cm in diameter.
  • The stainless steel handle of the Mineral B Pro pans is the characteristic Affinity handle, featuring a French curvature (cast stainless steel in a single piece, with an elegant design and the brand logo). It is riveted, and the perforations in the De Buyer logo act as a heat stop.

CARBONE PLUS

  • Suitable for professional and very intensive use. Not recommended for domestic use.
  • No beeswax layer is applied in the factory, so the pieces may be affected by weather conditions. If there is humidity in the environment, they may show rust in some areas; this is not a defect (something very clear in the hospitality and restaurant industry), as they are pans made of almost 100% iron.
  • Being designed for professional use, they do not require prior seasoning, as they become seasoned in a very short time with intensive use.
  • If intended for domestic use, a "double seasoning" is recommended: a first seasoning by boiling potato skins and a second with vegetable oil, similar to the process for Mineral B pieces.
  • Riveted handle. Lower quality rivets than those of the Mineral B handle.
  • Available in more sizes, reaching up to 50 cm in diameter.
  • The stainless steel handle of the Carbone Plus pans is tubular and hollow, so it does not heat up. It is a much simpler handle and is riveted.
